Banana Bread Muffins


1 ¾ cups whole white wheat flour or whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup canola oil or melted coconut oil or butter
½ cup honey or maple syrup
¾ teaspoon vanilla extract
1 egg
2 teaspoons Encala
1 cup mashed banana


Mix together the flour, baking powder, soda, and salt.
In a separate large mixing bowl, combine oil, honey, vanilla, and egg.
Add in Encala and mix until dissolved.
Add the mashed banana and mix well.
Add the wet ingredients to the flour mixture, along with the mashed banana, and fold the batter together until just combined.
Pour the batter, by ¼ cup measurement into a 12-cup muffin tin that has been well greased or lined with muffin liners.
Bake for 20-25 minutes at 350 degrees F, or until a toothpick inserted in the center comes out clean.
Allow to cool for 10 minutes and then remove from pan and enjoy or cool before storing at room temperature for 3 days.
