Chocolate Cake-Like Brownies
¾ cup butter
1 ¼ cups demerara sugar
½ cup unsweetened cocoa powder
1 teaspoon vanilla
1 ½ cups gluten free flour
2 tablespoons Encala
1 teaspoon baking powder
¼ teaspoon baking soda
1 cup milk
1 cup chopped walnuts or pecans or mixed dried berries
Preheat the oven to 350°F degrees.
Grease a 15 x 10 x 1 inch baking sheet and set aside.
Melt the butter in a saucepan over medium heat.
Remove the pan from the heat and add the sugar and cocoa powder until well combined.
Add eggs and vanilla and beat lightly with a wooden spoon until well combined.
In a separate small bowl, mix the gluten-free flour, the Encala, baking powder and baking soda.
Add the flour mixture to the chocolate mixture, then stir in the milk until combined.
Add the nuts, or dry mixed berries, if using.
Pour the dough into the prepared pan and spread it evenly.
Bake for 15 to 18 minutes or until a wooden toothpick inserted near the center comes out clean.
Cool two hours on a wire rack and cut your delicious cake like brownies in any size and shape you want.
