1 cup canned coconut milk
½ cup sweet potato puree, or canned pumpkin puree
1 banana frozen and chopped into 1-inch cubes
2 teaspoons maple syrup
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon grated nutmeg
¼ teaspoon ground ginger
1-2 scoops of Encala
1 tablespoon walnuts, chopped optional
Place coconut milk in a blender first and then add in the sweet potato puree, spices, vanilla, maple syrup, Encala, and bananas.
Blend until smooth.
Divide the smoothie between 2 glasses and top with chopped walnuts if desired and a drizzle of maple syrup.
