No Bake Granola Bars


1 cup pitted dates
2 cups oats
¼ cup maple syrup or honey
¼ cup peanut butter or sunflower butter
½ teaspoon vanilla extract
1 tablespoon melted coconut oil
1 tablespoon Encala


Place 1 cups of pitted dates into a large bowl and cover with hot water. Let soften for 5 minutes.
Drain the dates and place into a food processor fitted with an s-blade.
Add in 2 cups of oats, ¼ cup maple syrup or honey, ¼ cup peanut butter or sunflower seed butter, ½ tsp vanilla extract, 1 tablespoon melted coconut oil, a pinch of salt, and 1 tablespoon of Encala.
Pulse until mixture is combined and dates are broken down.
Press the mixture into an 8×8 baking dish lined with parchment paper.
Chill for 10-15 minutes and then cut into bars.
Store in the refrigerator for up to 7 days.
