Shrimp Pie


Ingredients (for Dough):
400g gluten-free flour
3 tablespoons of lime
200g of COLD butter
½ teaspoon yeast
1 whole egg
Salt to taste
4 tablespoons lactose free milk
1 egg yolk to brush over the dough

Ingredients (for Filling):
½ chopped onion
2 cloves garlic to taste
green scent (optional)
800g of shelled shrimp
2 tablespoons Encala
400g cream cheese
salt to taste
black pepper to taste


Instructions (for Dough):
In a bowl, mix the flour, and the butter with your hands until you get a crumbly dough.
Add yeast and egg, then mix.
Add salt and milk, then knead well to get a smooth dough.
Wrap in film and refrigerate for approximately 30 minutes.

Instructions (for Filling):
Sauté the onion and garlic in butter or oil.
Then, add the rest of the vegetables in and sauté (if you choose to add more vegetables).
Season the shrimp with salt and pepper and sauté until they are all orange.
Add Encala to the mixture and mix well.
Add the cream cheese and mix thoroughly.
Let it cool.

Roll out a little more than half of the dough using a rolling pin.
Line a pan approximately 12 inches in diameter with a thin layer of dough, place the filling in the middle.
Roll out the remaining dough and place on top of the filling.
Brush the dough with yolk and bake at 392°F, preheated, for approximately 40 minutes or until golden brown.
