Sidney's No Bake PB Cookies


2 cups sugar
3 tablespoons unsweetened cocoa powder
½ cup butter or margarine
½ cup milk
1 pinch salt
3 cups quick cooking oats
½ cup peanut butter
1 teaspoon vanilla extract
3 scoops Encala


In a saucepan, bring sugar, cocoa, butter or margarine, milk, and salt to a rapid boil; boil for 1 minute.
Add quick-cooking oats, peanut butter, Encala, and vanilla extract; mix well.
Working quickly, drop by teaspoonfuls onto waxed paper and let cool completely.
Makes around 25 cookies with 10 cookies providing a half serving of Encala.
